Marinated Caprese Salad

When the weather starts to get warmer, a cool, refreshing salad is a great snack or side for dinner. I love the combination of flavors and textures that comes from the caprese salad. Check out one of my favorite summer salads!

4 Roma tomatoes, coarsely diced
1 cucumber, coarsely diced
1 red onion, sliced
Fresh mozzarella balls, diced
¼ cup chopped basil
¼ cup Balsamic vinegar
¼ cup Extra Virgin Olive Oil
2 tbsp of water
Salt and pepper to taste

Combine the tomatoes, cucumber, onion, mozzarella, basil in a bowl. Drizzle with balsamic vinegar, olive oil, water. Add salt and pepper as desired. Let cool for 30 minutes in fridge.
