DUBUQUE – College students around the area are getting some local flavor in their meals as the University of Dubuque and Clarke University implement locally grown and produced foods into their cafeterias. This program has not only benefited the schools themselves by providing fresh produce, but it has given the community itself a boost.
There are still some logistical problems that need to be worked out, however. There is talk of a local food hub, which could serve as a middleman between the local farmers and buyers. Should this food hub be put into action, it could serve as a solution to any difficulties in the process.
